Basic Healthy Meals For Dinner Within Your Budget

When the sun has gone down and you feel hungry, you wish to eat something healthy and tasty and you don’t know what your options could be. You can try these ideas for some healthy and tasty meals. These are 2 simple recipes with a limited number of ingredients. We’d be using salt, vinegar oil, olive oil, pepper, butter, and fish sauce as our standard pantry ingredients.

1.Chicken with White Beans in Tomato Sauce

For our very first dish, we’re going to need chicken thighs, tomato sauce, garlic, white beans, and scallions. We’d start with cooking the chicken on a hot pan with medium heat in one tablespoon of extra virgin olive oil. Spread the olive oil all over the pan and put your chicken thighs into it. Put salt all over it and let the chicken cook like this on medium-low heat for about 10 minutes uncovered just on one side. Make sure you check it frequently so it doesn’t get burned. This will crisp up the chicken thigh skin. After that, flip all the chicken thigh pieces and cook them for 10 more minutes, covered with a lid.

In another pan saute 2 cloves of sliced garlic until tender and after that add rinsed and strained beans, you can use any beans of your choice. Toss everything together, add tomato sauce and a little bit of water. Let the water reduce gently and cook for 15 minutes on low heat and then season it with salt. When everything is cooked, place the beans on the plate with chicken and some sliced scallions, salt, and pepper on top.

2.Chicken with Broccolini and Mustard Dressing

For the second dish, we need chicken thighs, eggs, lemon, mustard, and broccolini. For this one, we’re going to cook the chicken thighs the same way as we did for our previous dish. While the chicken is cooking, get one teaspoon of oil and let it get hot. Now cook the broccolini in it for about 3 minutes. Then flip them around and add in some hot water, it would help to create hot steam which will cook the broccolini a little bit faster. Once all the water is gone from the pan, add half a teaspoon of butter and some salt on top of the broccolini. If you can’t find broccolini, then you can use any other vegetable as well.

Now boil some water and put some cold eggs in it and cook them for around 7 minutes until they get hard-boiled before plunging them into an ice bath. Now time to make a sauce for our dish. On a plate, add mustard into white vinegar, lemon juice, and olive oil and mix it all together.

Now place your broccolini on a plate, top with some chopped chicken, sliced eggs, and drizzle with your dressing, and season with salt and pepper if you wish.
