Steak is a versatile meat that’s quick to prepare on the grill, in a skillet, or under the broiler. Healthy Steak Dinner Meals – Steak Burritos
Prepared fresh salsa- ½ cup
Water- ½ cup
Instant brown rice- ¼ cup
Can black beans, rinsed
Strip steak- 12 ounces, trimmed & thinly sliced crosswise
Freshly ground pepper- ¼ tsp
Canola oil- 1 tbsp
Cheddar cheese- ½ cup, shredded
Prepared guacamole- ¼ cup
Fresh cilantro- 2 tbsp, coarsely chopped
In a small saucepan, combine salsa and water and bring to a boil. Stir in rice and bring the heat to a simmer. Cover it and cook for about 5 minutes and then stir in beans. Return to a simmer and cook uncovered, until the rice is tender and most of the liquid has been absorbed.
Sprinkle steak with pepper. In a large skillet, heat oil over medium-high heat and then add steak. Cook it until browned, preferably for about 3 to 5 minutes.
To assemble, divide the steak among the tortillas and top it with an equal portion of cheese, cilantro, guacamole, and the rice mixture. Roll each tortilla into a burrito.
Healthy Steak Dinner Meals – Skillet Steak With Mushroom Sauce
Boneless beef sirloin steak- 12 ounces, cut 1 inch thick, and trimmed
Salt-free steak grilling seasoning- 2 tsp
Canola oil- 2 tsp
Broccoli rabe- 6 ounces, trimmed
Frozen peas- 2 cups
Fresh mushrooms- 3 cups, sliced
Unsalted beef broth- 1 cup
Whole-grain mustard- 1 tbsp
Cornstarch- 2 tsp
Salt- ¼ tsp
Preheat oven to 350°F. Sprinkle the meat with steak seasoning.
Heat oil in a skillet over medium-high, add meat and broccoli rabe, and cook for 4 minutes. Place peas around the meat.
Transfer the skillet to the oven and bake for 8 minutes. Remove meat and vegetables from the skillet, cover it to keep warm.
For the sauce, add mushrooms to drippings in the skillet and cook for 3 minutes over medium-high. Whisk together beef north, cornstarch, mustard, & salt and stir into mushrooms. Cook it until thick and bubbly. Serve the meat and vegetables with sauce.
Healthy Steak Dinner Meals – Steak & Eggs With Chimichurri
Olive oil- 1 tbsp
Flank or skirt steak- 1 lb.
Salt and black pepper to taste
Roma tomatoes- 4, halved lengthwise
In a skillet or grill pan, heat ½ tbsp of olive oil over high heat. Season the steak all over with pepper and salt
Cook for 7-8 minutes until fully browned on the outside and firm. Let it rest for 5 minutes and then slice it against the natural grain of the meat.
Place the tomatoes in the same pan and cook for 2 minutes until the bottoms are lightly blackened.
In a large non-stick pan, heat the remaining ½ tbsp olive oil. Crack the eggs and fry them until the whites just set and the yolk is loose. Season it with pepper and salt.
When serving, spoon chimichurri over the steak and eggs.
