Ingredients

  • Tomatillos (should be husked, and halved) – 1/2 lb.
  • Jalapeño – 1 (halved and seeded)
  • Onion – 1/2 (small and cut into wedges)
  • Lime Juice – 2 tbsp. (lime should be fresh)
  • Packed Cilantro – 1/3 Cup
  • Kosher Salt – per taste
  • Large Eggs – 6
  • Olive Oil – 1 Tsp.
  • Pepper Jack – 1 Cup, shredded (You can use cheddar cheese as well)
  • Refried Beans – 1 Cup of Fat-Free
  • Large Tortillas – 4

Procedure

  • Take broiler and arrange an oven rack away from the broiler. The distance should be at least 6 inches. 
  • In the rack, place a foil paper and on top of it, place tomatillos, jalapeno, and onion with the cut side down. 
  • Boil all three ingredients until they blistered for approximately 10 to 12 minutes. 
  • Once boiling is done, take them out and let them cool. 
  • Wait for onion, jalapeno, and tomatillos to get normal at the room temperature, place them in the food processor and cilantro, lime juice, and salt. 
  • Switch on the food processor and pulse it to combine all the ingredients well to make a chunky salsa. 
  • As your salsa is ready, keep it aside and start with the rest of the recipe’s preparation. 
  • In a bowl, beat six eggs with ¼ teaspoon salt and one tablespoon of water.
  • Now, transfer the beaten eggs in a non-stick skillet placed over medium heat.
  • Stir eggs with a silicone spatula to reach doneness without burning eggs. It will take 2 to 3 minutes to reach the desired doneness. 
  • Once eggs are medium soft, add in ½ cup of shredded cheese. 
  • Nicely fold it with eggs to melt and secure favors.
  • With cooked eggs, it is time to place the burrito. 
  • Take tortillas and lightly bake them on a pan to heat them slightly. On the tortillas, place ½ cup of beans, equally divided eggs for each burrito and cheese on top.  
  • On top of it, add two tablespoons of salsa and roll it over. 
  • Repeat the same steps with the rest of the tortillas to make tasty and healthy breakfast burritos. 

Extra Tip For Breakfast Burritos

You can bake rolled burritos on medium heat to get crispiness on the outer edge. Burritos nicely wrapped with foil can stay up to 3 weeks. During the use, only remove the foil and bake.
