Prepare These Three Dishes Using Green Pancakes

If your household loves waking up to pancakes in the morning, this routine could quickly get boring. It might be advantageous to whoever is preparing breakfast because it is just the same food prep over and over again. But it is an entirely different story when it comes to the taste buds. If you want variety in your pancakes now, consider making some green pancakes.

If you say green pancakes, it refers to pancakes made with spinach and a few other vegetables. They are gluten-free and quick to prepare. Take note of the three different recipes here.

Green Pancakes

Depending on what suits your fancy, you can add just about any vegetables in your pancake rolls. Here are its ingredients:

  • 5 eggs
  • 500 ml oats milk, or any milk
  • 150 g rice flour ( wholegrain, light or spelt flour)
  • A handful of parsley, mint or basil
  • Sea salt
  • A  handful of spinach

Here are the instructions:

1. Crack the eggs and put them in a food processor and add the other ingredients and pulse until the mixture turns smooth.

2. Let it rest for 20 minutes before putting some of the mixture into a frying pan.

3. Add coconut oil or butter to a non-stick frying pan and put it on medium heat. Wait for it to get hot enough before adding 180ml batter into the pan.

4. Fry the batter for 1 to 2 minutes until you see bubbles on the surface and the cooked side has turned brown.

5. Checked with a spatula if the batter can be detached from the pan without sticking before flipping it and frying the other side for about 1 minute.

6. Remove from pan.

7. Repeat the process to cook the remainder of the batter.

8. Store leftover crepes in an air-tight wrap in the refrigerator so they won’t get spoiled for 3 to 4 days.

Servings: 10-14 pancakes

Sweet Potato and Za’atar Green Pancake Rolls

For its ingredients, you’re going to need the following:

  • 4 green pancakes
  • 1 large sweet potato
  • 200 g feta cheese
  • 2 handfuls chopped spinach
  • 1 cup full-fat Turkish yoghurt
  • 2 cup cooked chickpeas
  • 1 tbsp lemon juice
  • 2 tbsp chilli flakes
  • cinnamon
  • 2 tbsp za’atar

For cooking, preheat the oven to 400°F. Take the sweet potato out and cut it into two lengthwise, then cover each side with oil and cinnamon. Put them on a baking tray and in the oven for 40 minutes. Fry the spinach pancakes.

For the baked potatoes, mash them with a fork, then add in a squeeze of lemon juice and cinnamon. Transfer the mashed sweet potato onto half of each green pancake, then cover the rest with yoghurt. After that, cut the feta cheese into 1-cm thick sticks and top them up on each pancake. Then, add more toppings, such as chickpeas, spinach, chilli flakes, and za’atar. Roll the green pancakes, then slice them into 5-cm rolls.

Servings: 20 rolls

Mustard, Gruyere, and Lentil Green Pancake Melt

For this, gather the following:

  • 4 green pancakes
  • 8 cherry tomatoes
  • 4 large tsp mustard
  • 8 slices gruyere cheese
  • 1 bag mixed lettuce
  • 200 g cooked lentils
  • 1 Galia melon
  • balsamic vinegar
  • 1 avocado
  • olive oil
  • 10 cm cucumber
  • salt and pepper

Fry the pancakes. Put two slices of gruyere cheese right at the centre of each pancake, then cover it with mustard. After that, add thinly sliced tomatoes and lentils on top. Make a quarter fold out of the pancakes, then move them onto a baking tray. Drizzle them a bit with olive oil. Bake at 400°F for around 10 to 12 minutes. You’d know they’re ready too when the cheese starts to melt. Chop avocado, cucumber, lettuce, and melon and combine everything in a salad bowl with the rest of the lentils. After, drizzle with balsamic vinegar, olive oil, and salt and pepper, then toss. Serve it along with the baked pancakes.

Green Pancake Banana Split

Gather these ingredients:

  • 4 green pancakes
  • 1 cup whipped cream
  • 4 bananas
  • 1 cup raspberries
  • 4 tsp honey
  • 1 cup Greek yoghurt
  • 4 tbsp nut butter
  • 1 handful hemp seeds
  • 1 oz dark chocolate

Lay the pancakes out in a small bowl, then add yoghurt and whipped cream. Cut the bananas and spread them out on top of the pancakes. Put in the raspberries and add honey and peanut butter. Chop the dark chocolate into fine pieces, then sprinkle them on top of the combined ingredients, along with hemp seeds.
