Quinoa Is An Alternative To Rice

It is grain like in form and looks just like it sounds. There are several recipes for quinoa salad on the internet and if you can cook it, you can make this meal. The good thing about quinoa salad is that it is loaded with vitamins, minerals, proteins and fiber!

To make quinoa salad, soak the unpeeled seeds in water for about 15 minutes to soften them. Then cook them in 2 cups of water per cup of cooked seeds. If you cook the seeds for longer than they are done will give you a tougher, less chewy texture. If you don’t bother cooking the seeds, you can add them when you mix them with your salad. Or just use them in a sandwich.

To dress the salad, add a small handful of chopped or ground radishes, finely chopped cucumbers, chopped tomatoes, a bit of salt, a bit of pepper and a bit of lime juice. For a tasty twist, toss in a generous helping of baby tomatoes, finely chopped walnuts and crunchy onions. Adjust the dressing to your taste!

As a dip, pour about a third of a cup of softened, chopped avocados onto a plate along with the cooked seeds. Toss in a handful of chopped baby tomatoes and a few crumbled tortilla chips and you have a delicious dip! If you aren’t much for nuts, you could also use walnuts, chives, sunflower seeds or granola bars as dip.

Another quick and easy meal is made by melting some quinoa and adding it to a warm bowl of tomato soup. Stir in any greens you like and enjoy your new quinoa soup! It’s good all day and helps you stick to your goal of eating healthy!

Try Making A Quiche

You can dress up a quick healthy meal any time. Try making a quiche. Combine one egg, one cup frozen yogurt, two cups reduced fat sour cream, one tablespoon chopped fresh herbs like thyme, basil and oregano and put in the refrigerator until ready to eat. Then serve with your favorite sauce on the side and enjoy a delicious cold meal!
